Andy's Mission Call
We've had the most amazing few weeks, Andy got his mission call!!! We promised a thousand dollars to the person who guessed the right place...what a shame nobody guessed the Dominican Republic, Santo Domingo East Mission! Andy couldn't be happier. Andy's friend Evan got his call two weeks before Andy, his mom said that it was amazing how it just felt right when he read where he was going. Chris couldn't have said it better! Even though the DR was not even close to where any of us guessed, we knew it was exactly right as soon as he read it. We went online and found a great site. If you have a minute check it out. WOW!!! (Just the first link with the blue house, and you might want to turn off my music so you can hear it better.) It gave us a good idea of what Andy's next 2 years will be like. We feel very blessed for Andy to have this wonderful opportunity!

Streusel Top Banana Bread

BREAD:
3 cups sugar
1 cup oil 2/3 cup water
4 eggs
3 well ripened bananas (may use 16oz. can pumpkin)
3-1/2 cups flour
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
½ teaspoon cloves
½ cup chopped nuts (I use walnuts, chopped extra fine)
½ cup raisins (I don’t use any)
TOPPING:
¼ cups packed brown sugar
¼ cup finely chopped nuts (I use walnuts)
2 Tablespoons flour
½ teaspoon cinnamon
2 Tablespoons margarine or softened butter
DIRECTIONS:
Heat oven to 350. Grease and flour 2 loaf pans. (I also cut about a 4 inch wide sheet of wax and lay it on the bottom and up to 2 sides, without flouring pan. This gives me 2 handles to pull the bread out of pans after baking. It never sticks this way.) In your mixer. Beat bananas to a pulp. Add sugar, oil, water, and eggs. Beat 1 minute at low speed. Add flour, soda, salt, cinnamon, nutmeg, and cloves; blend at low speed until moistened Beat 1 minute at medium speed. Stir in nuts and raisins (if you want them). Pour equally into prepared pans. Mix topping ingredients until crumbly, (make sure margarine or butter is straight from the fridge or topping will be paste, not crumbly). Sprinkle topping over bread, making sure you don’t go too heavy in the middle, or it will sink into bread while baking. (This however is not a problem for my family, as they like it better that way) !!! Make at 350 for 60 to 75 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes, and then remove.
